"Sado" - An Island Where "Oni," the Divine Spirits,
Live On Experience a one-night-only outdoor gastronomic dinner at the largest gold mine ruins in Japan, in the legendary land of Zipangu.

"Sado Island" floats approximately 32 km from the mainland. It's a 3.5-hour journey from Tokyo by train and high-speed ferry, or about 2 hours from the nearest Niigata Airport by the same means.

Sado, an "ideal land of gastronomy," boasts rich natural resources from its sea, mountains, and rivers, offering bountiful seasonal delicacies. Recognized as Japan's first GIAHS (Globally Important Agricultural Heritage Systems) site in 2011, Sado's ingredients include flavorful vegetables and rice cultivated with environmental preservation in mind, as well as fresh seafood from its abundant fishing grounds.
Renowned chef Tyler Burges, an expert in fire-based cooking, will use direct and indirect flames to meticulously prepare and enhance the potential of each ingredient, presenting a delicate array of dishes.

This exclusive outdoor gastronomic event will take place at the ruins of Japan's largest gold mine, established about 400 years ago during the Samurai era. Starting at sunset, against a backdrop of a transforming sky from red to purple and indigo, guests will enjoy a one-night culinary experience under a starlit sky, accompanied by local sake pairings and traditional performances celebrating the divine "Oni" spirits.

7 dishes of wood-fired dishes prepared with Sado ingredients such as Sado beef, which is called “phantom Wagyu beef” because it is not sold in the market, and fresh seafood from Sado Island.

Chef Profile

Tyler Burges

Tyler Burges, born April 1988, graduated from the Culinary Institute of America (CIA), known as the Harvard of the culinary world. After working at Michelin two-star "Coi" and other renowned restaurants in the USA, he joined Saison Hospitality. At "Saison" in San Francisco, which earned three Michelin stars for its fire-based cuisine and ranked among the World's 50 Best Restaurants, he served as Executive Sous Chef. In 2019, Tyler moved to Japan after being captivated by its ingredients and culture during an outdoor restaurant event in Wajima City, Ishikawa Prefecture. He became Executive Chef of "SMOKE DOOR" in 2022.
